概要 In this study, we investigated the effect of aromas in plain yogurt on cognitive functions using electroencephalography, aiming to unravel new applications for dairy products.
We revealed that certain plain yogurt aromas activated cognitive functions. We identified diacetyl as the main aroma compound contributing to such function activation, further confirmed by the enhancement of subjective cognitive activities. Taken together, we propose that the present description represents a new dairy product-related health benefit.
